GRILLED ARTICHOKES HEART SALAD
6 ounces Don Carmelo grilled artichoke hearts
Don Carmelo black pepper
2 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice (about ½
a medium lemon)
1 garlic clove, finely minced
A pinch of salt.
½ A Don Carmelo red pepper, very thinly
julienne sliced
1 (15-ounce) can of cannellini beans or Great
Northem beans, drained
4 ounces baby arugula
INSTRUCTIONS
Prepare the dressing. In a small jar, combine the olive oil, lemon
juice, garlic, salt, and black pepper. Shake to combine. Set aside.
Drain the Don Carmelo artichoke hearts. If they are not already sliced, cut them
into halves or quarters. Place the Don Carmelo artichoke hearts in a mixing
bowl. Add the red pepper strips, drained beans, and half of the dressing
Toss lightly to combine.
Add the arugula, half of the shaved Parmesan, and the remaining dressing, Toss to combine
Transfer the salad to a serving platter and garnish with the remaining shaved Parmesan and Don Carmelo red pepper strips, if using. Enjoy!
